Fish Fingers and Triple Cooked Chips

So I was recently sent a pretty nifty Air Fryer from a brand called VonShef. The first thing I knew I wanted to try out in it was chips. After a bit of a play around I found that ‘triple cooking’ my chips was the BEST way to do them, it sounds a lot more long winded that it is, its actually really simple. I also wanted to tryout some Fish Fingers.

For this recipe I made them separately as I wasn’t sure if I could get away with doing them together in the Air Fryer, but I’ve had some people say they cook two different things at once in theirs so I will definitely be trying that soon!

These amounts made enough for Me, Abs and Isla:

  • Fish Fillets cut into strips, I used Basa because I like it (but mainly because its cheap)
  • 70g Wholemeal Breadcrumbs
  • 2 Eggs
  • 50g Flour
  • Chopped Parsley
  • 1 Lemon zested
  • Salt and Pepper
  • Maris Piper Potatoes

Put the Flour, Egg and Breadcrumbs mixed with the Lemon Zest and Parsley into separate, shallow dishes and season the Flour with Salt and Pepper.

Lightly dust the strips with Flour, then dip in the Egg, then into the Breadcrumbs. I always keep one hand for the Flour and Egg then one hand for the Breadcrumbs (which was impossible whilst needing to take photos too) …otherwise you end up in a right old muck and fuddle.


Lay the strips on top of each other in the Air Fryer basket with a spray of Fry Light, you could use any spray oil if you aren’t a fan of Fry Light. If you don’t have an Air Fryer pop them onto a baking tray lined with a sheet of greaseproof paper. Cook for 180′ for around 8 minutes then turn over and cook for another 8 minutes.


If you are using an Air Fryer set the Fish Fingers to one side, ready to make the chips. Maris Pipers always make the best chips (in my opinion), cut them however big you like them and bring to the boil in salted water. Boil just for a minute so the outside softens enough to slightly fluff them up. Drain and leave in the colander to steam dry then give them a little toss around, of course you could do this in advance whilst making the Fish Fingers. If you are using an oven, make the chips first then put the the Fish Fingers in the oven for the last 15 minutes of cooking the chips.

So! (I really hope this isn’t too confusing with the two different ways, I’m almost confusing myself…) once the Chips are Par Boiled put into the Air Fryer (or on an oven tray) with some spray oil and pop into the Air Fryer (or oven) on 140′ for 20 minutes.

Give them a shake around and add some Sea Salt (invest in some Maldon Salt!) it makes Chips ten times better, trust me! Then turn the Air Fryer (or Oven) up to 180 and cook for a further 20 minutes.

I had some Crushed Peas with my Fish Fingers and Chips, which were literally just cooked Peas with a little Water and Butter… crushed! And some homemade Tartar Sauce which I just made with Mayo, chopped Gherkin, Parsley and a little Lemon Juice!

And thats that!

So far I have only used the Air Fryer for Chips, Fish Fingers and Fish Cakes… and so far so good. Im planning Chicken Nuggets and Arancini over the next week and of course will be sharing how they turn out!
